Ingredients
  

  • Balsamic Dressing
  • 1 cup balsamic vinegar
  • ¼ cup honey or brown sugar
  • Salad
  • 10 ounces fresh baby spinach
  • 3 cups fresh strawberries hulled and sliced
  • 1 cup blueberries
  • cup crumbled feta cheese
  • 1 cup pecans toasted (some chopped, some whole)

Instructions
 

  • Prepare the balsamic dressing:
  • Pour the balsamic vinegar and honey into a small saucepan. Heat over medium heat until gently boiling.
  • Reduce the heat and simmer, stirring occasionally, for about 10 minutes or until the mixture thickens and reduces by half.
  • Remove from heat and transfer to a heat-safe bowl. Let cool slightly; the glaze will thicken as it cools.
  • Assemble the salad:
  • In a large bowl, add the baby spinach, strawberries, blueberries, and feta cheese. Toss gently to combine.
  • Divide the salad into serving bowls. Top with toasted pecans.
  • Drizzle the balsamic glaze over the salad just before serving.
