- ½ cup extra-virgin olive oil
- 1 teaspoon honey or maple syrup optional, for sweetness
- 1 small garlic clove minced or pressed
- 1 teaspoon Dijon mustard
- ¼ teaspoon salt adjust to taste
- Pinch of freshly ground black pepper
In a small bowl, whisk together lemon juice and honey (if using) until smooth.
Add minced garlic and Dijon mustard, whisking until combined.
Slowly drizzle in olive oil while whisking continuously to create a smooth, creamy emulsion.
Season with salt and pepper to taste.
