  • ¼ cup fresh lemon juice
  • ½ cup extra-virgin olive oil
  • 1 teaspoon honey or maple syrup optional, for sweetness
  • 1 small garlic clove minced or pressed
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon salt adjust to taste
  • Pinch of freshly ground black pepper

Instructions
 

  • In a small bowl, whisk together lemon juice and honey (if using) until smooth.
  • Add minced garlic and Dijon mustard, whisking until combined.
  • Slowly drizzle in olive oil while whisking continuously to create a smooth, creamy emulsion.
  • Season with salt and pepper to taste.
  • Taste and adjust: add more olive oil or honey for a milder flavor, or more lemon juice for extra brightness.
  • Use immediately or store in a sealed container in the refrigerator for up to 2 weeks. Shake well before serving.
