Ingredients

  • cups all-purpose flour
  • 2 tablespoons granulated sugar
  • –2 teaspoons ground cinnamon
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • cups buttermilk or regular milk
  • 1 large egg
  • 2 tablespoons neutral oil plus more for cooking
  • 1 teaspoon vanilla extract
  • For the Churro Coating & Serving
  • 2 tablespoons butter melted (optional but recommended)
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon or more to taste
  • Chocolate sauce or sweetened condensed milk for serving

Instructions
 

  • In a large mixing bowl, whisk together the flour, sugar, cinnamon, baking powder, and salt.
  • In a separate bowl, whisk the milk, egg, oil, and vanilla until smooth.
  • Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.
  • Heat a nonstick skillet over medium-low heat and lightly grease it.
  • Pour about ¼ cup of batter per pancake onto the skillet. Cook for about 2 minutes, until bubbles form and the bottom is golden. Flip and cook for another 30–60 seconds. Repeat with remaining batter.
  • In a small bowl, mix the sugar and cinnamon for the topping.
  • Brush each warm pancake lightly with melted butter, then coat with the cinnamon sugar mixture.
  • Serve warm with chocolate sauce or condensed milk drizzled on top.
