  • 7 oz feta cheese
  • 3 tablespoons olive oil
  • Zest of 1 lemon
  • Salt and black pepper to taste
  • Tomato Basil Topping
  • 9 oz cherry tomatoes finely chopped
  • 2 tablespoons olive oil
  • 1 garlic clove finely minced
  • Small handful fresh basil thinly sliced
  • Salt and black pepper to taste
  • To Finish
  • 1 tablespoon balsamic glaze

Instructions
 

  • Add the cream cheese, feta, olive oil, and lemon zest to a food processor. Blend until smooth and creamy. Season with salt and pepper to taste.
  • In a bowl, mix the chopped tomatoes with olive oil, garlic, basil, salt, and pepper until well combined.
  • Spread the whipped cheese mixture onto a serving plate or shallow bowl.
  • Spoon the tomato basil mixture evenly over the top.
  • Drizzle with balsamic glaze and serve immediately with toasted bread or crackers.
