Ingredients
  

  • 1 cup long-grain white rice not instant
  • 3 tablespoons unsalted butter
  • ½ small onion finely diced
  • 1 cup chicken broth
  • 1 cup whole milk
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 cup sharp cheddar cheese freshly grated

Instructions
 

  • Rinse the rice under cold water using a fine strainer until the water runs mostly clear. This helps keep the rice light and fluffy.
  • In a medium saucepan set over medium heat, melt the butter. Add the diced onion and sauté for 3–4 minutes, until softened and lightly golden.
  • Stir in the rinsed rice, chicken broth, milk, paprika, salt, and pepper. Bring the mixture to a gentle simmer.
  • Cover the saucepan, reduce the heat to low, and cook for 18–20 minutes, or until the rice is tender and most of the liquid has been absorbed. Avoid lifting the lid during cooking.
  • Remove the pan from the heat and stir in the grated cheese until melted and creamy. Fluff gently with a fork.
  • Serve warm as a rich, comforting side dish.
