Step 1: Prep Your Potatoes
Using leftovers?
Warm them gently on the stovetop or microwave to make mixing easier.
Starting fresh?
Peel, cube, and boil potatoes until fork-tender (about 15 minutes). Drain, mash, and let cool slightly. Add a bit of milk or butter if needed, but avoid making them too creamy.
Step 2: Mix the Ingredients
In a large bowl, combine:
Warm mashed potatoes
Shredded cheddar cheese
Eggs
Flour
Salt and pepper
Optional: Add your garlic, chives, or spices here for an extra kick.
Mix until the mixture is thick and holds together. If it’s too wet, add a touch more flour.
Step 3: Shape the Bites
Use a spoon or small cookie scoop to form golf ball-sized rounds. Lightly wet your hands to prevent sticking. For an extra crispy coating, roll them in breadcrumbs or panko before cooking.
Step 4: Bake or Fry
To Bake (Healthier Option):
Preheat oven to 375°F (190°C).
Line a baking sheet with parchment paper.
Arrange bites evenly and spray with cooking spray.
Bake 20–25 minutes, flipping halfway through, until golden brown and crisp.
To Fry (Crispiest Option):
Heat 1–2 inches of neutral oil in a heavy skillet over medium-high heat.
When the oil is hot (350°F/175°C), carefully drop in 3–4 bites at a time.
Fry 2–3 minutes per side until golden.
Transfer to a paper towel-lined plate to drain.
🧂 Seasoning & Variations
The base recipe is delicious as-is, but here are some fun ways to change it up:
Loaded Potato Bites: Add crumbled bacon and green onions.
Spicy Kick: Stir in jalapeños and pepper jack cheese.
Herb Lovers: Use fresh parsley, rosemary, or dill for an herby punch.
Cheese Swap: Gouda, mozzarella, or even blue cheese for a bold twist.
Vegan Version: Use vegan cheese, plant-based egg replacers, and mashed potatoes with olive oil.
