Ingredients
  

  • 1 pound lean ground beef
  • 2 medium sweet potatoes peeled and diced
  • 1 ripe avocado sliced
  • 1 cup cottage cheese
  • 1 yellow onion diced
  • 2 tablespoons olive oil divided
  • 2 tablespoons taco-style seasoning
  • 2 tablespoons hot honey
  • ½ teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon ground cinnamon
  • Salt and black pepper to taste
  • Optional toppings: chopped fresh cilantro red pepper flakes, fresh lime juice

Instructions
 

  • Preheat the oven to 400°F (200°C). Place diced sweet potatoes on a baking sheet and toss with 1 tablespoon olive oil, paprika, garlic powder, cinnamon, salt, and pepper. Roast for 40–45 minutes, stirring halfway, until tender and lightly crispy.
  • Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the diced onion and cook for 3–4 minutes until softened.
  • Add the ground beef to the skillet. Cook for 6–8 minutes, breaking it apart, until fully browned. Stir in the seasoning, salt, and pepper.
  • Assemble bowls by layering roasted sweet potatoes, seasoned ground beef, avocado slices, and cottage cheese.
  • Drizzle hot honey over the top and finish with optional garnishes if desired.
  • Serve warm and enjoy.
