Ingredients
  

  • 1 pound ground pork sausage or ground beef or turkey
  • 32 ounces processed melting cheese cut into cubes
  • 2 cups shredded Mexican-style cheese blend
  • 8 ounces cream cheese cubed and softened
  • 2 cans 10 ounces each diced tomatoes with green chilies, undrained
  • 1 can 15 ounces corn kernels, drained
  • 1 can 15 ounces black beans, drained and rinsed
  • ½ cup finely chopped red onion
  • Juice of 1 lime
  • 2 tablespoons fresh cilantro chopped
  • Tortilla chips or corn chips for serving

Instructions
 

  • Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it apart, until fully browned. Drain off excess grease.
  • Lower the heat to medium-low. Add the cubed melting cheese, shredded cheese blend, and cream cheese. Stir frequently until everything is melted and smooth.
  • Stir in the diced tomatoes with chilies, corn, black beans, red onion, and lime juice. Cook for about 5 minutes, stirring, until heated through and well combined.
  • Remove from heat, sprinkle with chopped cilantro, and serve warm with tortilla chips or corn chips.
